Actually I told Mr Riaz to buy me some chicken that has a bone and skin on it so I can make some soup and I told him I was actually Jonesing for some egg drop soup. Since I do not go to a regular Chinese have this yummy soup. Jonesing actually is actually a street slang meaning wanting something so badly and it keeps going in your head all of the time. It is a craving that never goes away until you get it and when you got it you are satisfied.
First of all you will need 1 kg or 1 lb of chicken and it has to have to skin on and be on the bone because it makes a good broth. This is not only for egg drop soup but for hot and sour soup as well. This is the holy grail of these two soups. After this you can take the chicken and use it for other recipes such as the one I have coming right up so stay tuned. Add either 2 quarts or 2 liters of water. By the way 2 quarts are the same as a 1/2 gallon and it takes 4 quarts to make a gallon and then it also is 4 liters. Honestly you really need 1/2 gallon of water and nothing more. Turn the heat on to low and let cook for 30 minutes.
Add 1 pinch each of pink salt, msg, white peppercorns crushed in a mortar and pestle, 1 tsp each of soy sauce, sesame oil, 3 cloves of garlic, 1 small piece of ginger peeled and crushed 3 green onions chopped. Add these to the pot and cook another 30 minutes on low on stovetop. The pieces of chicken should still be in tact and not broken in to pieces and to be firm. This is removed and in a bowl 2 fresh eggs are cracked and beaten. The beaten egg is added to the soup when it is on rapid boil. The egg should bloom here and add a little at a time and not all at once. So now we have a perfect hot steaming bowl of egg drop soup and I hope you enjoy. Also if you want it more hearty then second thought just go ahead and tear that chicken up and place this back in to the pot. For instant pot and the like you can either slow cook on high for 2 1/2 hours or pressure cook on high for 11 minutes then press sauté on high and add the beaten egg a little at a time. Enjoy with spring rolls and oolong tea.
