Hi Everybody, here is a recipe that is out to be a real winner and crowd pleaser. So bear with me if you can because this is a great meal for someone that is a vegetarian or vegan or it can also be used as a side dish by an omnivoure like me. Any type of vegetable can be used for this dish too and it includes edible fungi aka mushrooms if you want to use this instead. The vegetables can be either fresh or frozen and you will need 1 cup of vegetables of choice.
This I would leave up to you my readers because not everyone likes the same thing. Tougher vegetables like turnips and beats I suggest you pressure cook them for 30 minutes on pressure cook setting, such as beats or turnips. The rest you can steam ahead of time for between 15 to 20 minutes. This can be done in the instant pot on sautè function. If using frozen vegetables then you can skip this step.
Add 1/4 cup of either olive, corn, canola,safflower, sunflower, vegetable or coconut. Add 1 onion or shallot, 3 cloves of garlic chopped, 1 bullion cube crushed or 1 pinch of the powder bullion, 1 pinch of pink salt. 3 dashes of maggi or knorr aroma. If using fresh tomato it is 1 cooked down until it is mushy also if using canned tomatoes, just use 4 of them out of the can and put the rest in a zip baggy and toss it in to the freezer. Add 1 tsp of either lemon or lime juice.
After this add Simplified Mekelesha, Berebre, Niter Kibbeh for spicy and you can omit the mekelesha if you prefer. for mild you add 1 pinch of turmeric, 1 green chili and then the niter kibbeh.
This can be eaten with injera or even with rice if you prefer. Oh one thing else if you are using eggplant: please do not forget to slice and fry this before using this. Cheers!!!!
