I got this idea from different food blogs. I went to I blog hop every day looking for what I am going to make for dinner. This came out of multiple blogs. I can’t tell you how many times I blog hop that my husband swears that I should move my bed in front of a computer because I spend my days playing runescape and looking for recipes.
Also I am a Muslim and I only eat zabiha halal food which means it is permitted. I don’t eat out of restaurants at all because you don’t know what they are doing to your food and I don’t want to be at their mercy. This is why I collect recipes and try them out myself.
Equipment: a Dutch oven, a spoon, a cutting board, a knife.
Ingredients: 1 kilo or a lb 1/2 of meat you have a choice of what you want to use lamb, beef, chicken, or goat. I used lamb. A choice of vegetables, zucchini, peas, carrots, cauliflower, broccoli, yellow squash. I used zucchini, 1 tomato, 1 shallot or onion. 2 cloves of garlic. Xawaash get it here. Xawaash 1 chili red or green. I used a red Thai chili. It depends on how spicy or mild you want it. I added 1 cube of Maggi or Knorr, a couple of dashes of Maggi or knorr liquid seasoning. 1/4 of a cup of olive oil, a tiny pinch of salt, the bullion cubes is already too salty, 2 cups of water.
Method: Add the oil and the xawaash followed by Maggi or Knorr and Maggi liquid seasoning, a tiny pinch of salt, chop the chili and add to the pot and stir. Chop and add shallots and 2 garlic cloves and stir. Add your choice of meat and brown it. Add your choice of vegetable and stir till it catches all of the seasoning then add the water. let it simmer for an hour to hour 1/2 till the meat and vegetables are tender.
Note: brine the meat before you cook it. It comes out nice and tender and sometimes for tough meat use a pressure cooker. It would take at least 30 to 40 minutes then let the pressure escape fully before you open it. Never open a pressure cooker that has full pressure or even attempt it. It is very dangerous. If using a crock pot brown the meat on the stove before you add it to the crock pot and cook on high for 3 to 4 hours or until done. So here are your options.
It is eaten with rice or with a flat bread like chapati I made turmeric rice to go with this dish.
