Oh my God I love potato salad and there are different ways to make them and truly delicious it pairs very well with any fried fish and fried chicken just like coleslaw and the best picnic food and also great for barbecues and so is coleslaw.
This is quick and easy and I love it. It is so divine and so delicious.
I boil the potatoes in the skins to keep their vitamins. I also have an option weather I want to peel them or not and it depends on my mood. Ok potato skins are very edible. When I make potato salad I use between 4 or 5 potatoes. I boil the potatoes for between 30 and 45 minutes depending on how big they are and drain them. We have just us and company doesn’t come over much. I peel and chop 1 onion and put it in the bowl of the potatoes I had boiled and cut up. Mind you the skin is not an issue here and when eaten it does no harm. I cut 3 or 4 stalks of celery (optional). I even like hard boiled eggs in my potato salad. I boil 2 hard boiled eggs for between 10 to 15 minutes to have hard boiled eggs (optional). I also love chilies very much it is a known fact you don’t have to do this but I do I add just a wee drop of ghost pepper sauce (optional). This is for those like me that like it hot. Some add pickle relish which I don’t add. that is a me thing but I am writing it here for those that do like it (optional).
Now I add when I am in a mood from here you can add what you wish. Balsamic vinegar and olive oil, mustard, mayonnaise or a combo of mustard and mayonnaise.
While using mayonnaise it is 4 tbs to every 4 or 5 potatoes used.
1/4 of a cup to olive oil and 2 tbs balsamic vinegar for every 4 or 5 potatoes used.
3 tbs of mustard for every 4 or 5 potatoes used. it can be any type of mustard you prefer horseradish, brown, spicy brown, Dijon etc.
3 tbs of mayonnaise and 1 tbs of mustard for every 4 or 5 potatoes used. I mixed it and added a pinch of paprika for garnish (optional) so it can look pretty. Also I have added parsley and sometimes dill weed too for garnishes.
