One day I went to the store with my youngest daughter and I couldn’t help it. I had seen a bag of frozen scallops and they were pretty cheep. So I got some. When we was done with our shopping, Mr. Riaz and I dropped her off, helped her take up her groceries and headed home.
When I got home I chucked mine in the freezer until I was ready for them. When I wanted them I took them down and let them thaw in the fridge overnight and I rinsed them very well.
I made the pakora batter like this, 1 handful of rice flour, 4 handfuls of besan (chickpea flour), 1 pinch each of Curry Powder, turmeric powder, red chili powder, ajwan and pink salt.
I added 1/4 cup of water so I can make a batter a little at a time. You do not want a thin batter. A nice thick one is ok where it can coat each and every scallop. I added 3 dashes of maggi or knoor aroma and mixed it in the batter and added the scallops I had rinsed.
The spices can be bought at any Indian and Pakistani grocery store.
Heat up a cast iron or other skillet with 1/4 cup of vegetable or peanut oil and fry until golden brown and place in a bowl lined with paper towel. Repeat until this is finished and enjoy.
