This is something that is very quick that I put together at a drop of a hat because I was hungry. Even when I am in that state I manage to whip up something that is Yummy.
I put 1 bag of bitter melon leaves in to a pot with 1/2 cup of water and got it to boil. Here in the USA they come frozen and that is how I bought it from a grocery store. After all of the ice melted from the bitter melon leaves I added 1/4 can of coconut milk in to the pot. I added 1 packet of noodles. It can be Shan, Knorr, Maggi, Indomie, etc. plus the seasoning packet that came with the noodles and let them cook until they became soft.
I added 1 can of octopus here also squid and sardines can be used. The ones in oil is prefered because the oil gives the noodles great flavor, I also added 1 tsp of sesame oil, 1 pinch of pink salt, 1 tsp of fish sauce, 3 dashes of Knoor or maggi aroma and 3 dashes of panzu sauce.
The frozen bitter melon leaves, coconut milk and sesame oil can be found at any Asian store. Serve with either 1 chicken egg or 1 quail egg (optional).
