I went to a bunch of Nigerian recipe sites and I decided on trying my hand on making frejon. From what I had read the info I gleaned from this dish that it is made by Christians on Good Friday and there was another tale to it also that was so dark pure evil and sinister in my opinion is called slavery.
The slaves that was taken from Africa and brought to work in Brazil took this with them and after it was abolished there the former slaves went back to Africa taking this dish with them. So this is where this dish came from and it is coconut milk with beans that is pureeed.
I have some African brown beans I have used for this dish and you can use any brown bean you wish also. I have taken 4 handfuls of the brown beans and I let them soak over night. The next day I washed the beans that was soaking 3 more times and put it in a pot with 1 quart or 1 liter of water and set it to boil on the stove on high heat then turned the burner down to low and put the cover over it and simmered until the beans was soft.
I added 1 bullion cube, 2 dashes of adobo, 3 dashes of maggi or knorr aroma and 1 pinch of red chili powder and stirred. I cooked the beans until the water was reduced then added 1 half can of coconut milk and used my immersion blender on low speed to blend so nothing splatters.
I added 2 handfuls of Ijebu gari to a wok and roasted it slightly and added it to the beans mixture and I stirred it to combine.
I really enjoyed it and I do not mind making it again.
