Howdy folks, do you remember the dough that is I made for paratha, puri, chapati and katlima? This is the katlima I had made from this dough. Also soak 4 pinches of mash ki dal in water overnight in the fridge.
The next day, rince the mash ki dal in cold water 3 or 4 times. Return it back to the bowl. Break off a piece of amchur, add 1 pinch of coriander seeds in to a mortar and pestle and grind in to a powder. Add to the bowl with the mash ki dal. Add 1/4 cup of water, 1 pinch each of ajwan, pink salt and red chili powder. Stir add 2 handfuls of besan (chickpea flour), 1pinch of cilentro and mix in to a lump free batter.
Add 1/4 corn oil in to a cast iron skillet and turn on the burner then pinch off a piece of dough that is as big as a small tennis ball. Flatten it with your hand and dust it with flour and take a pinch and sprinkle your suface and your rolling pen and roll the dough in to a round flat shape similar to a tortillia. Put the spicy mixture on top of the dough and spread it out eavenly.
Take a lid of a pot like I did so it does not drip on the way of taking it and putting it in the now hot oil by carefuly lifting it up the spicy side up and place it on the pot lid or plate and take it to the stove and carefuly place it in the hot oil.
Turn every few seconds to make sure that the masala or spicy side is cooked as well making sure the katlima is nice and toasty brown. Repeat until all of the spicy batter is used up. This is enough to make 6 katlimas. Oh all of thse can be found at any Indian and Pakistani grocery store.
