Here is another refreshing drink and this is how I make tigernut milk. The tigernuts are a hard nut type thingy and are found in African grocery stores. Old World Market here in Chicago carries them.
They are pricy but they are good and the drink is as refreshing as zobo.
I soaked the 4 handfuls of tigernuts in 1/2 of a pitcher of filtered water in the fridge for 2 days. I got out my big oster blender for this one to grind them because it is too much for the immersion blender to handle. It was 1 liter of water I had in the pitcher actually. I added these to my big oster blender 1 pinch of cinnamon powder and 1/4 cup of honey and I was grinding away until they broke in to very tiny particles and it turned milky. Agave nectar or turbinado sugar can be added too.
Take a small strainer and pour the tigernut milk in to the the pitcher you have soaked the tigernuts in previously. Let the strainer catch the particles and gentley press to extract more tigernut milk out of these particles. Put the lid over the top of the pitcher and put it in the fridge. Serve with ice (optional).
