I know I better do another vegan dish because I do not want to disapoint anyone. This truely is a wonderful dish and Mr. Riaz stopped fussing to clean his plate. I also love Puerto Rican food and that too is a well known fact. This is something I used to make a real long time ago and other dishes like this one that had chicken in it. One day I will post the chicken recpie which is very similar. I used to make this when I was in my 20’s and this is a Benazir Khan original dish.
I got out my pressure cooker and started making my sofrito. Halal Pasteles With Arroz Gandoules Please refer to this link for the sofrito recipe it is on that page. I told Mr. Riaz not to get so hasty because the red color did not come from red palm oil this time. It came from the acchiote (annato seeds) cooked in the oil gives it that rich color and makes great sofrito. After the sofrito is made I added a pinch each of black pepper corns and cumin seeds to my mortar and pestle and set it aside.
I added 3 shakes of adobo. 1 sazon packet, 1 pinch of oregano, the black pepper and cumin i freshly ground, 5 hanfuls of chickpeas I had soaked overnight, 2 big carrots I had peeled and washed and one baggie of frozen yucca I cut up and took the string out that is in the middle.
You can use the ones that are fresh too but there are some that are frozen that has been already peeled. I added 1/2 gallon or 2 liters of water to the contents inside the pressure cooker and turned on the stove. As soon as the safety valve comes up it is time to turn on the timer for 25 minutes. When time is up let the pressure escape on its own. When the safety button falls you know it is time to open the pot and look at the contents inside. It was perfectly cooked and it was seasoned to perfection.
I made a pot of basmati basmati rice to go with it and it was heavenly. This is my own personal recipe and I am glad to share it with everyone. Plain Jasmine Rice Etc. follow the rice cooking instructions here. The brown rice takes a little bit longer to cook.
