Again I made moin moin in the microwave and When I made my roman bean moin moin after I soaked the beans overnight taught me a lesson on grinding bigger beans. I do not want it to burn out the motar in my blender so I tried a different approach on making moin moin. I ended up cooking the beans first before I made my moin moin in the microwave. Here is another thing I do not peel my beens nor do I feel the need to do so.
I washed and soaked 5 handfuls of african brown beans in water for 3 hours before I added it to the pressure cooker. I added 1 quart or 1 liter of water to the beans, turned the burner on medium high heat, added 1 onion or shallot, 1 bullion cube, 3 dashes of maggi or knorr aroma, 2 pinches each of crayfish, grated nutmeg, bonga fish powder and smoked dried shrimp. I covered it with the lid and when the safety valve popped up I set the timer for 15 minutes.
When time was up I turned off the stove and let all of the pressure escape and watched the safety button fall then opened the lid and the beans was perfect for grinding. I cut 1 red bell pepper and tomato in to tiny pieces. I added 1 habenero I have deseeded. Scotch bonnets and red chili powder can be used too. I added 3 cloves of garlic. I added 1/4 cup of water to the blender jar that came with my immersion blender since I have been using this a lot. I put all of these in a tiny bowl and put my knife and cutting board in to the sink to get them out of the way. I made the blended pepper mix to use for my moin moin.
I ground my unpeeled cooked beans and opened 1 can of corned beef or fish that is in tomato sauce oil or brine. I just crumbled them in there. I also had 1 can of quail eggs. I ran out of fresh ones and I had these in my cupboard to fall back on. I opened it up and drained them and rinsed them off. I crumbled these too in the moin moin batter and lastly I added the blended pepper sauce and mixed with a wooden spoon until it was well mixed. I also added 3 tbs of palm oil to the moin moin batter and stirred some more.
I poured the batter in to pyrex containers and this time with the lids off that I put them in the microwave cooking them for 5 minute intervals and stirring and taking them out of the microwave and letting it sit until they are slightly cool and stirring them again and back in microwave again and repeating these steps this time with the lids loosely on top just in case if there is a splatter, just make sure the lid just sits on top of the containers.
Keep doing this until the moin moin sets. Sometimes with this one it would take up to 30 minutes for making moin moin. That is because I had 3 big containers this time.
Any way when you let it cool after the time that has been spent in the microwave will help thicken it too. Ok this one was a little lengthy but hey it is cool.
