I wanted some akara really bad and I wanted to try out a recipe using besan (chickpea flour). So an Idea came in to my head. Mostly akara (fried bean cakes) are made from black eye peas or brown beans. I just wanted an excuse to make up something different. So here I go and on to the recipe.
I added 1 cup of besan to a small mixing bowl. To that I added 1 bullion cube, 3 dashes of maggi or knorr aroma, 1 pinch each of crayfish,thyme, basil, boni bonga fish powder, red chili powder, paprika and baking powder.
I added 1/2 cup of water a little at a time or enough to make a thick batter. I used the electric mixer to beat air in to it to make it light and to give it a lift. The baking powder helps in this manner too to help stabilize it.
I added 1 minced shallot to the batter and mixed it in very well. In a cast iron skillet I added 1/4 cup of vegetable oil and I fried them in batches of 4 at a time until they were golden and done on the inside. I laid them in a bowl lined with paper towel to catch the excess oil. I repeated this process until the batter is compleatly used up.
I served this with pap that I had made according to package directions.
