Sometimes I bring home something to try. I have not eaten cluster beans before and was more then willing to try it. I even looked up recipes on how to make them. Then from there I came up with my own. This is how I did it.
I added 1/4 cup of olive oil to the pot and turned the heat on medium high. I added 1 shallot cut in to half moon slices. Onion can be used too in place of a shallot In this recipe. I added 4 curry leaves, 1 pinch each of mustard seeds, cumin seeds, ajwan and hing. I watched them pop and I mean it is sizzling.
I added 2 cloves of garlic and 1 small piece of ginger that I have ground in to a paste and added it to the shallot or onion mixture. I broke off 1 piece of amchur and ground it in my mortar and pestle. I added it to shallot or onion mixture then added 1 pinch each of pink salt, turmeric and red chili powder. 1 tomato or 1 tsp of tomato paste can be used and 1/2 cup of water.
I stirred after I added the tomato paste. I used the last tomato for the salad, lol. I forgot there wasn’t any tomatoes in this house. If using a fresh tomato and chopped it in to small pieces. I would cook it down until it becomes mushy. After this is done I added the bag of frozen cluster beans and turned the burner down to low and cooked them for 20 minutes. I was stirring occationally too until it was done.
It is great with chipati and Mr. Riaz enjoyed it immensely. Please tell me how you like this dish.
