I have just made this this afternoon. When I finished cooking it I cut 2 small pieces and ate it and it is just tender and yummy. Mr. Riaz is going to have to eat this and I hope he would love it.
I washed the meat very well and worked on the marinade. I added 1/4 cup of rice vinegar, apple cider vinegar or white vinegar to the meat I had washed I gotten a beef brisket. I added 2 cloves, 1 pinch each of cumin seeds, corriander seeds and 1 broken piece of cinnamon stick and ground them then added it all over the meat. If you use cinnamon powder you can skip this step. I added 2 pinches each of pink salt, red chili pepper and turbinado sugar. I made an I made incisions in the meat however 6 small ones are fine and I sliced 2 cloves of garlic and added every slice to those incisions.
I set it in the fridge overnight and turned the oven on to 375 F or 190 c the next day. I got out my roasting pan and added 2 tbs of olive oil to the roasting pan including the marinade that came with the meat. I cooked it for 1 hour. That is 60 minutes that you set on a timer and cook with the lid on in the oven.Keep turning it every 20 minues. If still a little tough then cook for another 1/2 hour or 30 minutes or until it is done.
