If you remember my cormeal moin moin that I cooked in the microwave, then you would like this one too because it is nearly the same except with a twist that I added frozen whole kernal corn to it. I started doing this the night before by soaking 1 cup of cornmeal in 1/2 cup of water overnight in the fridge. I added this 1/2 cup of whole kernal corn that is frozen. It is cheeper then 2 or 3 ears of corn which you can add in its place but I rather pinch my pennies and I know a great deal when I see it.
After I had blended this together I poured it in to a medium mixing bowl. Next I made the blended pepper sauce by adding to the blender 1/4 cup of water, 1 habenero or scotch bonnet, 1 tomato, 1 red bell pepper, 1 onion or shallot, 2 cloves of garlic. I turned on the blender and blended it until it is a smooth puree.
In to the corn mixture I added 1 cookingspoon of red palm oil and the blended pepper mixture. I added 1 pinch each of crayfish, oregano, grated nutmeg, basil, thyme, red chili powder and paprika. I added 3 dashes of maggi or knorr aroma, 1 bullion cube and gave it a good stir.
I would either add 2 chicken eggs or 6 quail eggs that I wold boil for 10 minutes, crack and peel them then crumble it in to the moin moin batter. At times I can not find fresh quail eggs and I end up using the ones I get in a can. I open them drain and rince them before I crumble it in to the moin moin batter. I added 1 can of corned beef. You can also add titus sardines or a can of tuna or even a can of crabmeat. Drain it before you add it to the moin moin batter.
Stir well add to microwave safe dishes. As you are aware I am very fond of pyrex for cooking in the microwave. I also use ramekins and I add the moin moin batter to each one and with the ramekins I add plastic cling wrap to it and to the others that came with lids I add the moin moin batter to them and just lay the lids on top of the containers. Do not fully close the lids at this point. I then let it cook in the microwave between 4 to 6 minutes. When the knife comes out clean it means it is done. It’s just like making a cake almost.
However it is very yummy I have paired it with my upcoming new recipe called jollof quinoa and abacha. Abacha is posted here already. You can also eat it with jollof rice, pasta, bulgar, or a future surprise post which is also a jollof dish. For now it is top secret. 😀 I also drank goya malta light to go along with this or even with zobo. Oh yeah, that works well too. So until then I will see you In my next recipe post.
