This is the one I came up with because it is super duper healthy. Quinoa is packed with protein and a lot of other good stuff and it is a healthier alternative for rice and great for diabetics or for someone watching their calories.
It Is South America that has West Africa in this yummy dish. I washed and soaked the quinoa for 30 minutes then set it aside.
I made the blended pepper sauce by adding 1/4 cup of water, 1 chopped tomato, 1 chopped red bell pepper, 1 chopped onion or shallot or 3 chopped green onions, 2 cloves of garlic, 1 small piece of ginger that has been washed and peeled and 1 habenero or scrotch bonnet chili with the seeds removed. I blended these in to a puree.
I added 1 cooking spoon of red palm oil to the pot. Here you can add the vegetables and protein of your choice. I added 2 zabiha halal chicken hotdogs. You can add beef or turkey too but chicken and turkey are lower in fat. I added 4 baby eggplants or garden eggs for my vegetable of choice.
Mr. Riaz called to my attention that we had some eggplant left that I have overlooked from making my garden egg stew, lol. I used them up before they went bad. I am glad he did too. There are way too many people going to sleep hungry in the world and it is a shame to waste food. Also do not forget that I use zabiha halal meat only. Even fish and shell fish can be used for protein of choice.
I added my pepper sauce mixture, 2 tbs of tomato paste, 3 dashes of maggi or knorr aroma, 1 bullion cube, 2 bay leaves, grated nutmeg, 1 pinch of black peppercorns in a mortar and pestle that I ground, 1 pinch each of Curry Powder, white pepper, thyme, crayfish, red chili powder and paprika.
I stirred and added the quinoa I had soaking and 3 cups of water and brought to a boil on high heat then turned it down to low. I let it cook for 20 minutes or until done by stirring occationally until the water has dried up and the quinoa itself became soft. When the water is absorbed, turn off the heat and cover and let it sit for 20 minutes before serving.
From the last recipe post you can see this dish with the corn moin moin and abacha. Really you can eat this with any type of moin moin.
