I really love this type of chutney and because I do so much I came up with this idea. You can get all of these ingredients almost from any Indian and Pakistani grocry store.
I added 2 cups of water to a small pot and set it on high heat to boil. I added 1 pinch each of pink salt and red food coloring. I added 1 whole round red chili, 1 marble size piece of tamarind and boiled it for for 5 minutes. I turned the heat to low.
After I took a small strainer and strained this liquid from the stove. After I filtered out the tamarind skin and the liquid has no solid remains, I added the red liquid back to the pot and placed it back on low heat. I added 1/4 cup of agave nectar or you can add sugar free syrup. I hope you remember this from my sugar free gulab jamun post. That you can get in any Arabic or Middle Eastern grocery store. Agave nectar can be found everywhere.
I added 2 tsp of catsup. Please make sure you see one that has no high frutose corn syrup in it? Add 1 tsp of cornstarch in to 3 tbs of water in to a bowl and make a slurry. Add this slurry in to the pot with the red color liquid and stir until it becomes slightly thick.
Enjoy with pakora and samosa.
