This is a recipe that came off the top of my very head. If you remember my black mushroom rice recipe then you would love this recipe as well. I had a taste for food from the Caribbean. The actual black mushroom comes from Haiti. I do not see it here and I have been able to come up with a close enough find which is maggi black mushroom cube. They are called Djon Djon and maggi is the maker. The rest are easy to come up with.
Now I am going to tell you on how to make this. First boil the pasta to the package directions. Any type will do just fine except for lasana noodles. I added 1 drop of olive oil and 1 pinch of pink salt to the rapidly boiling water and cooked it for 20 minutes.
While the pasta is cooking I added to my mortar and pestle 1 pinch each of black peppercorns, allspice, black cumin seeds, cumin seeds, and 1 dry chili if using dried chilies. Any type of dry or fresh chilies will be ok for this dish. However When I the fresh chilies, I end up washing them and placing them in to a zip bag and stick them in the freezer to freeze them. They freeze very well too and so do fresh herbs. This is a tip so you can keep them longer.
If using this type of chili, do not add the dried ones. I ground them in to a coarse powder. Add 1/4 cup of olive oil to the pot and turn it on to medium high heat. Add 1 onion or shallot and chop or cut them in to half moon slices. Add 1 maggi black mushroom cube or Djon Djon, 3 dashes of maggi or knorr aroma, 1 splash of balsamic vinegar, empty the contents of the mortar. If using dry chili please omit the fresh one. If using fresh omit the dry one in the mortar and pestle. Add 1 pinch each of basil, oregano, marjarom, thyme, and rosemary.
Stirr and add 3 cloves of garlic chopped,3 roma tomatoes chopped and cooked down til it is a mush. Add your choice of veggies, they can be either fresh or frozen. I decided to go with peas because it is what I have on hand. Mixed vegetables is great too but it is best to get those frozen. Cook for 20 minutes on low heat and then add the entire sauce over pasta.
