Anyway I have been told I made the best biryani ever the other night by Mr. Riaz. I was more then pleased as punch when he told me. I made this ahead of time before I started making biryani. Here is my recipe for making biryani masala.
In a mortar and pestle I added 2 of each of bay leaves and green cardomom, 1 each of black cardamom, strand of mace, broken piece of star anise, round red chili, clove and 1 broken piece of cinnamon. If you are using 1 pinch of cinnamon powder skip this step and vice versa.
Add 1 pinch each of black peppercorns, caraway seeds, cumin seeds, fennel seeds and coriander seeds. Grind in to a coarse powder and empty it in to a clean bowl and set aside.
Grate some nutmeg 1 pinches worth ought to do quite nicely. Skip 3 dashes of cinnomon powder if using a broken piece of cinnamon. Add 1 drop of biryani essence which can be obtained at any Indian and Pakistani grocery stores. Give it a good mix and use this for making biryani.
This is for mixed vegetable, beef, lamb. goat, chicken, quail, veal, oxtail and fish biryani, kofta biryani and nargasi kofta biryani.
