Hi ya folks, first of all I want to say Ramadan Mubarak to all of my Muslim brothers and sisters. I have just conjured up in my mind another yummy sugar free desert in my mind. Actually I have revamped the classic desert kulfi in to something everyone can enjoy without guilt.
I still say diabetics please be aware there are the food exchange in managing your care of diabetes. What you need to start either are these molds that you see in this picture above. I bought this at Family Dollar ages ago. They can also be bought at a lot of other retail stores and also on Amazon.
In a mortar and pestle I had crushed 3 green cardamoms and added it to a bowl I added 1 pinch of nuts of choice crushed them fine and added them to the bowl, My choice was pistachios, almonds, peanuts and cashews are also options.
I added either 1/4 of a cup of sugar free syrup or agave nectar, 1 drop each of kewra and rose essence, 1 can of either pet or carnation unsweetened condensed milk or for those that have a milk allergy or lactose intolerant can use 1 can of coconut milk,
Mix to combine. The coconut milk option is also vegan friendly. Get a ladle and a small funnel to add to the mold and take a skewer to gently push down the nuts that gets trapped at the bottom and place the tops on top of the molds and stick them in the freezer for 24 hours or until it is completely frozen.
The frozen treats are ready to be enjoyed after iftar of course or even when it isn’t Ramadan.
