As you might have guessed is that I really love cabbage. This is a simple no frills recipe that came off from the top of my head and I hope you will enjoy it.
I added 1 pinch each of caraway seeds and black pepper corns to my mortar and pestle in to a coarse powder then set it aside.
I added 1/4 cup of olive oil to my pot after I had turned it on to high heat.
I added the contents of my mortar and pestle, 1 small dry chili of any kind or 1 drop of pepper sauce, I added chili d’arbo.
1 pinch of red chili flakes can be used also in place of the small dried chili or pepper sauce.
I added 3 dashes each of maggi or knorr aroma and liquid smoke, 1 bullion cube or either 2 pinches of seasoned salt or vegtea seasoning.
I added 1 pinch each of dill weed and parsley, 1 onion or shallot cut in half moon slices fried until brown color, 2 cloves of garlic chopped cooked until the rawness goes away. Do not let the garlic turn brown.
Finally I cut one small head of cabbage in to pieces. Make sure the pieces are small enough so it can cook evenly. I used savoy but red or green cabbage can be used too.
Turn the heat to low and add the cabbage to the pot and don’t add water.
This is fried cabbage not cabbage soup.
The cabbage in this dish is not supposed to be mushy. It is supposed to be a little crispy.
Stir until the cabbage is well covered in the spicy mix and place the lid on the pot and keep heat on low for 20 minutes and stir occasionally.
The cabbage was nice and cooked as well as being delicious. 😋
When it was done I ate it with some cornbread I made too. Also you can eat it with chapati.
