First of all please do not think I am swearing. I can be honest with you I am not saying what you think I may say.
This is a delicious condement from Ghana. Its name is shito which is a pepper sauce. So now I am going to show you how I made this easy recipe.
Make a ginger garlic and onion paste first and if you are using fresh peppers add either 1 habenero or scotch bonnet. This time do not remove the seeds because shito is suposed to be hot and spicy.
In a blender it is 1 medium piece of ginger washed and peeled, 1 onion or shallot, 1 clove of garlic and 1/4 cup of water for ease of processing. After this no more water is needed.
On high heat, heat up a cast iron skillet or wok then add 1/4 cup of peanut, corn, or canola oil. Add the ginger garlic and onion paste. If you are using red pepper flakes do not add the scotch bonnet or habenero.
Cook this in oil like you are making a stew. Add 1/4 cup of red chili flakes if using, 3 dashes of maggi or knorr aroma, 1 bullion cube, 3 pinches each of boni bonga fish powder and crayfish, 5 smoked dried shrimp, either 1 can of anchovies or titus sardines including the oil or 1/4 cup of dried anchovies crumbled.
This depends on the availability of the dried anchovies. If not the can of anchovies is perfect. Stir a lot and it will turn almost like black. Add 1 pinch each of paprika and red chili powder, 2 tbs of tomato paste.
Stir until it is well blended and it looks just like it does in the display picture. This is very tasty with akara and with puff puff. Enjoy!!!!!!!
