Jollof Gari

Ok from the earlier post of this blog encountered an error and it is not showing up on my wordpress on my macbook air for some reason or another but showing up elsewhere. I do not know why. So I am going to rewite this post all over again so hopefully this doesn’t happen ever again.

From my earliest blog about these wonderful jollof dishes. I talked about making jollof rice, jollof spaghetti, jollof pasta, jollof bulgur, jollof quinoa, jollof couscous, now jollof gari and soon jollof fonio. We also covered oven baked jollof, banga jollof, native jollof and benachin. Jollof fonio is the latest Until I spot another jollof recipe to try.

They are very addictive just like other jollof dishes and the links I am going to post are My Oven Baked Jollof Rice, Jollof Cous Cous, Jollof Quinoa, Native Jollof Rice Or Palm Oil Rice, My Version Of Banga Jollof, Jollof Spaghetti Or Pasta, Bulgur And Rice and Benachin.

These are for references that can be either veg, non veg and perhaps even plain. Just make the pepper sauce as followed by either a blender or mini processor. If using a blender add 1/4 cup of water for processing. Chop 1 onion or shallot or 3 green onions, 1 small piece of ginger peeled and washed, 2 cloves of garlic, 1 habenero or scotch bonnet deseeded, 1 red bell pepper. Also while using a mini processor there is no need to add water and by the way if you have an immersion blender they usually come as a part of the package.

Add 3 tbs of red palm oil to the pot, the blended pepper sauce, 1 pinch each of black and white peppercorns, crayfish and grind in to a coarse powder. Add 1 pinch each of paprika, red chili powder, stir and add in 2 bay leaves. Add for single use only Curry Powder Add in 2 cups of either white, yellow or even ijebu gari with 4 cups of water and a dab of tomato paste for more color. Add any vegetables and or meat of choice. Be sure to cook the meat first and use the stock in place of water and add 1 bullion cube and 3 dashes of maggi or knorr aroma.

This is splended with any nice cold non alcoholic brew of choice and I want to add this I and every diabetic has to proceed with absolute caution while eating this because of some dear friends advised me cassava will spike my glucose levels. There was a codec I think in the original post that it wasn’t reading and this post ran in to an error so I had to rewrite this. There was another older post this happened too also and believe me it is frustrating as hell. Ok now hear we go. DUCES!!!!!!!!!
