This is one of my favorite dishes and very simple too. It doesn’t have a lot of ingredients so here we go. With the pot on low heat,
I boiled 4 pieces of smoked turkey. They can be the wings, tails, necks, etc. I used the tails. I boiled them for 40 minutes after adding 5 cups of water.
I added 1 half of a large head or 1 whole small head of cabbage. It can be either green, red or Savoy cabbage. Make sure the cabbage is cut in small pieces. Add 3 pinches of vegtea seasoning or seasoned salt.
Add to mortar and pestle 1 pinch of black peppercorns and crush them in to a course powder. In a wok or skillet add 1/4 cup of corn oil, 1 onion or shallot cut in to half moon slices and fry until brown. Chop and add 3 cloves of garlic, 1 whole whole small dried red chili crumbled or 1 pinch of chili flakes in to the wok or frying pan and cook with the onion mixture.
After this I added the contents of the skillet in to the pot of smoked turkey and cabbage and cooked for another 20 minutes with the lid on. After this the cabbage and smoked turkey is ready to eat.
Enjoy it with cornbread or hot water cornbread.
