I haven’t had meatloaf in ages until the other night. It is so yummy that my mouth was in full water. I had this with the last post called macaroni and cheese. Only as a side dish that is. Anyway that is why it is purely delicious. This is an all time American comfort food. It can be made with any type of zabiha halal mince only.
Preheat the oven to 400F or 200C. Spray the cast iron skillet with cooking spray. In a bowl add 1 pound or 1 kilo of mince (ground meat). Turkey, lamb, beef, veal, beef and chicken are the options.
I used ground beef this time. I rinsed it before adding it to the bowl. I add 1 onion or shallot that I had chopped. 1 pinch of black peppercorns in mortar and pestle, 1 pinch of majoram, 1 clove of garlic chopped, either 3 dashes of seasoned salt, 1 bullion cube, 3 pinches of bullion powder or vegtea seasoning, 1 egg, 1 green bell pepper chopped, 1 tbs of ketchup, just make sure it says no high frutose corn syrup is added.
Add 1 tsp each of mustard and mayonaise, 3 dashes each of maggi or knorr aroma, Worcestershire sauce and balsamic vinegar.
In a food processor you can add either package of crackers that is unsalted or make bread crumbs by adding 6 pieces of whole wheat bread toasted and torn in to tiny bits to make in to bread crumbs. Make sure It it is 1 cup. You can also add 1 cup of cooked rice or 1 cup of raw oatmeal in its place. These are the choice of fillers.
I used the oatmeal. I added this to the ground meat mixture and mixed very well using my hands. I have the cleanest hands around and you have to be clean when it comes to handling food. I shaped it in to a loaf and placed it in my cast iron skillet. I placed my meatloaf in the oven and baked it for 20 minutes or until it is done.
This is enjoyed with macaroni and cheese, mashed potatoes and gravy and a salad.
