Actually this is more like a lunch or a snack. I really love this and it is very simple. It goes like this. Prep 4 or more potatoes. It depends on how many people are eating so I used how much I had stated because it was for me because I was hungry. By prepping I mean is to poke holes all over the potato with a fork and stick it in a microwave using a microwave friendly vegetable steamer. They are available at Target, Sears, Kohls and other stores. Kmart has been gone for ages from chicago or there are not that many left.
Microwave for between 6 to 10 minutes. It depends on your microwave and let potatoes cool if you want to peel them. I prefer not to because I love to keep the peels on my potaoes. These are purely optional.
Next after The potatoes are soft enough to mash I put it in a bowl and cut the potatoes and mashed it a little with my fork. You can add your choice of chutney if you wish. Sugarfree Tamarind Date Chutney, Sugar Free Red Chutney, or Green Chutney.
The chutneys are very optional but what I did put on there was 1 pinch each of red chili powder. paprika and chat masala, 3 tbs of plain yogurt,1 tbs of olive oil, mix and add either 1 pinch of cilantro or mint. The mint can be either fresh or dried. Add 2 handfuls of sev. There are a few types of sev in many Indian and Pakistani grocery stores. It doesn’t matter which one you use. I bought and mixed 3 differnt types.
