Here is a simple two part recipe on one single post that you will enjoy, inshalah. It is so very tasty and I did not add the chili to the chicken because my youngest daughter is not in to spicy food at all.
Simple Baked Chicken:
First I preheated the oven to 350F or 177C. I sprayed a roasting pan with cooking spray. I added the pieces of chicken. It was a total of 6 chicken leg quarters, 12 pieces of other pieces of chicken unless if you are just using wings then It is 18 chicken wings or 1 whole chicken.
Sprinkle either 3 pinches of vegtea seasoning, adobo or seasoned salt and 4 dashes of lemon pepper. This may be doubled depending on how many people are eating with you. Cover the roasting pan and let it cook for 30 minutes. Turn and let it bake for another 30 minutes or until it is done. I removed the lid and let it cook for another 30 and it depends on how big the pieces are.
Herbed Rice:
When it was done that there was still quite a bit of liquid from the chicken. I didn’t put any water at all whatsoever before I put it in the oven. There was quite a bit of stock and I didn’t through it away I told Mr. Riaz I am cooking rice to use this all up and make the dinner more satisfying and filling because he griped he was hungry.
There was plenty of seasoning left from the chicken. All I did is placed the chicken on a plate and transferred the stock from the roasting pan in to a medium sized coldero, crushed 2 cloves of garlic in my mortar and pestle and crushed 1 small chili and added these to the pot.
I added 1 tbs of olive oil because the chicken was quite fatty from the skin that was on it. It made a wonderful stock though. I also added 1 pinch each of rosemary, thyme, basil, oregano and marjoram. I stirred and went to go add 2 cups of rice. It can be any type of rice and rinse until the water is clear.
Add rice to pot and bring to boil. You may want to add 2 cups of water just in case. Place aluminum foil or banana leaf under the lid and place it on the pot. Turn down heat to low and let cook for 20 minutes. It is up to 30 minutes for brown rice. Just keep checking on it from time to time. When the rice has absorbed the water then you turn off the heat and let sit for 20 minutes. After you turn off the heat you can readd the chicken on top of the rice then place the lid.
If there is still a little liquid remaining it is not a problem that the rice will absorb it even when the heat is off.
