Hey Folks: I am sorry that I took so long in making a post for puri. The link is on the left. It is the link for the dough and for the puri itself is very simple. What is puri? Puri is like paratha but it is fried in oil and it goes very well with the cholay and halwa plus an egg which is of course a Pakistani breakfast. We will discuss it in a post eggs which is coming up shortly.
Take 1/4 cup of corn oil in to a hot wok or cast iron skillet and let the oil get hot. This is on high heat. Take 10 pieces of dough which is golf ball size and make it in to a round ball. Press it flat and dust in chiki atta ( whole wheat chipati flour), I have been using royal which has a picture of Amatab Bachan on it.
Who is he? He is a well known Bollywood actor. He is old now but he is still a damned good actor. I hope Royal pays the guy for using his picture and they should.
After dusting the balls of dough with the chiki atta, I got out my huge tray which is my work space. I flatten it with my rolling pen and roll until it is a a circle. It should look like it is half the size of a small chapati.
Carefully put the freshly rolled out puri in to the hot oil and let it fry until it gets brown. Count to 20 and flip and cook on other side until both sides are golden brown. Place on a paper towel lined plate so It can absorb the excess oil. Repeat the process until other pieces are done.
Enjoy this with cholay, halwa, egg and or kawa or tea.
