I have a mango chutney recipe for youuuuuu!!!!!! I hope you like itttttt!!!! This is a fool proof recipe and a very easy one too. The yield is either 2 or 3 very ripe mangoes. Make sure they are soft before you start making them.
Cut the mango in half and scrape out the pulp from the inside of the skin by using the front end of the spoon. Pull out this huge pit and scrape the pulp off of the pit in the same manner then the other half just like you did the first half. Repeat until you used up all of the mangoes.
Add 1 broken piece of amchur, 1 pinch each of cumin seeds, black cumin seeds, caraway seeds, coriander seeds, 1 clove that gets ground in to a coarse powder. Empty the contents in to the mashed mango pulp.
In the same mortar and pestle add 1 clove of garlic and 1 small piece of ginger that has been washed peeled and minced and mash this and add to mango pulp mixture. Add 1 pinch each of kaloonji, pink salt, turbinado sugar, turmeric, red chili powder. Add 1 tbs of either white or apple cider vinegar, mix very well.
Enjoy this with kabab or even with roti at breakfast time with eggs or with different snacks at tea time.
