Ah what a perfect way to enjoy a meal on a go. The Mexicans has done it for many generations because they are very hard working people and want something to take on the go. This type of flat bread is very much almost like the Pakistani chapati. With this tortilla dough you can make it as little or as big as you want. I made them small because I wanted tacos.
I really prefer softshell ones then the hardshell variety. It is a lot easier to chew and to digest I think.
I added 1 cup each of whole wheat flour and unbleached all purpose flour, 1 pinch each of baking soda and pink salt, 3 tsps of dalda ghee. I mixed it and then I added 1/4 cup of water a little at a time and kept mixing until I had a nice dough. 1 added 1 tsp of olive oil and kneaded the dough some more and covered and let it sit for 10 minutes.
On my work surfice which is my big old tray that I always use, my rollingpen and 1 small piece of dough golf ball sized dunked in some all purpose unbleached flour that I used for dusting and made a perfect circle.
I got my tawa meaning griddle really hot and cooked it on both sides just like a chapati. it looks just like the featured image above. It should be this color. Remove and set it in a cloth lined tortilla warmer and repeat until all of the dough is usd up. The yeiled was between 6 to 8 tortillas.
