Actually my youngest daughter loves broccoli and cheese. Any type of cheese can be used for this dish however. What I did is I added 2 cups of water and brought it to a boil. I cut 2 or 3 heads of broccoli in to spears and added it to the pot and placed the lid over it. I started it at high heat and after adding the broccoli I turned it down to low and let simmer for 20 minutes or until the broccoli is fork tender.
From here you take the amount of cooked broccoli on to a plate and add 2 pieces of any type of cheese you wish. I prefer slices because they are easy to handle. My youngest loves american cheese and we use old dutch here. I used pepperjack on mine but at the same time I love mine good and spicy. Also you can cook the broccoli on steam function in an instant pot and the like by placing required amount of water in the inner, lining place a steamer basket made for instant pot. Amazon sells them. Place the broccoli in it, select steam function for 15 minutes and place a glass lid over it.
This is a perfect side dish with barbecue chicken, ribs, etcetera.
