Hey guys, I have another yummy post for you I just want to do something different with green tomatoes other them make fried green tomatoes, green curry or even as a part of ayamase which is is an african dish.
Actually I am going to do a red tomato gravy with totally different spices in the future. This is made from leftover oil from actually frying meat. I had a tiny bit of oil and I did not want to waste. Ok my mom taught me about frugality because it is a sin to waste food really. But this is a southern dish from usa and It is also based on frugality.
I remember watching the frugal chef that used to apear on PBS. There are 2 PBS stations here in Chicago. One is channel 11 which he was on and another which is channel 20 which is funded by the City Collages of Chicago.
Actually I got a lot of my ideas from the guy named Jeff Smith who is the frugal gourmet. I would watch all of the cooking shows on channel 11 here in chicago. It started with the late Julia Child like I said before this was a long time ago before the food networks came in to being. This lady put cooking shows on the map and thank you very much ma’am and may God bless you.
I actually chopped everything from 1 onion or shallot, 2 cloves of garlic, 3 small tomatillos or 1 large green tomato. Sprinkle either 1 pinch of pink salt, kosher salt, or sea salt, or you can add 2 dashes of sea salt or 1 pinch of vegtea seasoning. There are a several ways you can do this according to how you want it to taste. You can add these to a blender with 1/4 cup of water for ease of blending, or you have the option of either caramelizing the onion or not which depends on you entirely.
The way I was feeling at the time I made this is combining everything and mixing it in the cast iron skillet in the oil that is left over from frying meat. In this case It was gizzards. It can be fried pieces of steak or even chicken if you wish. If you blended everything you chopped then add to oily droppings. If you didn’t blend then make sure the tomato mixture is good and mushy. Cover and bring to low heat to cook the green tomato mixture.
Add 1 tbs of all purpose unbleached flour and 1/4 cup of water to make a slurry and add it to the green tomato mixture. Stir and cook for 4 minutes or until thick. shut off and let stand for a while and serve with any type of fried meat and biscuits.
