Hey ya folks do you remember me from last recipe which is my jerk chicken post? If you do this post here goes right along with jerk chicken jerk ribs or even curried goat which I would do in the future one day. When I say my way it is because of so many choices what I have to give.
I am not the type that does the same thing all of the time because then it can be quite boring. This time I did not add oil to the beans part of this recipe and actually it tasted good too. Add 1 cup of dried beans to the pressure cooker. They can be cow peas which I used and also can be pigeon peas, pink beans or any type of red beans. wash them by adding water to the beans and gently drain the water off of them. Fill up the cooker again and make sure the water level is over the beans. This is about 1 qt or 1 liter of water.
The rest is all thrown together in to the cooker. Add 1 onion or shallot or 4 green onions with 4 cloves of garlic chopped and add this to the cooker. Add the spices which are 1 pinch of black peppercorns ground and then added to the beans in the cooker. Add also 1 pinch each of white pepper, thyme, basil, oregeno, paprika, red chili powder, marjarom, either 1 habenero or scotch bonnet deseeded and crushed or 1 drop of hot sauce, 1 bullion cube and 3 dashes of maggi or knorr aroma.
Cover the pressure cooker and turn on to high heat and let pressure build. After the the button pops up then turn heat to medium and let cook for 30 minutes. Turn off heat and let pressure escape. This will at least take 10 minutes so please allow this to happen for the sake of your safety. Do not open pressure cooker at this stage. It is totally unwise. If the beans was still a little hard add add 2 more cups of water. cover and repeat.
In a big caldero add 1 cup of rice to the pot and rinse until the water is clear. Add the cooked beans to this rice with 1 pinch of whole cumin seeds, either 1/2 can of tomato paste or 1 can of coconut milk with 4 more cups of water and the drippings that was left over from cooking jerk chicken or jerk ribs that would be my added touch. I did not want to waste the drippings left over from this at all. This is only if you are making jerk ribs or jerk chicken. The coconut milk or tomato paste is the only one that is a must.
You can also add a can of fish at the end if you wish and on your own plate because not everyone likes fish. I am the only one that loves the hell out of some fish or you can eat these yummy peas and rice or rice and peas or however you want to say it alone.
