- Preaheat oven to 350F or 180C for the first step. This is perfect on a very cold day and it is so yummy. Either 1 butternut squash, 1 small pumpkin or another type of winter squash similar. Wash and cut in half and remove those seeds and wash again. Spray medium sized roasting pan with cooking spray and place the pieces of squash in it then cover and place in an oven unseasoned for 30 minutes. Turn and flip for another 30 minutes. Repeat until it is done and you can tell when the squash is soft.
2. For meat sauce all I want to do is make the masala first for this part of the dish. In mortar and pestle add 1 pinch each of black peppercorns, coriander seeds, 2 kabab chini, 1 broken piece of cinnamon stick, greated nutmeg equal to being that of a pinch. Grind in to a coarse powder. Turn on heat to high in a pot, add 1/4 cup of olive oil, 1 onion or shallot, 3 cloves of garlic chopped. Fry until it is slightly brown and add contents of the mortar and pestle, 1 pinch each of turmeric and red chili powder, add either 2 pinches of pink salt, vegtea seasoning or bullion, 3 dashes of either maggi or knorr aroma, 1 tomato chopped and reduced to low and tomato cooked until it is soft and mushy. Rince and add 1 kg or 1 lb of mince of either turkey, goat, lamb, veal, chicken or beef after you rinsed this off. Cover and let cook for for 15 minutes and keep stirring in between.
Take the baked squash or pumpkin and fold in to the ground meat mixture. Oh my: it really smells great already. I was so hungry and could not wait to taste it. Add 2 tbs of tomato paste and 1/4 cup of water and replace the lid and let cook for 10 minutes to make this yummy red sauce that is oozing from the kadoo and the keema wich is squash and mince.
3. This is the final step and it is a yogurt mint sauce that goes with this and it is a must. 1/4 cup of plain desi yogurt, 2 cloves of garlic crushed in a mortar and pestle 1 huge pinch of mint, 2 tbs of water and mix and set aside. This gets added to the kadoo and mince after it gets put on your plate.
