Actually since I have made my tuna macaroni salad ages ago that I actually wanted to make a mackerel and a salmon mac salad too. Now all we have is salmon mac to do and have it published. I really love mackerel because it is cheep and very filling. Also it is just as delicious as tuna and very satisfing.
I brought 1 gallon or 4 liters of water to boil on high heat. Be sure to cover the pot and the water would at least take at least a full ten minutes to come to a rapid boil. When it is at rapid boil stage add 1 tsp of olive oil and 1 pinch of pink salt add 1 package of macaroni of choice and boil for 15 to 20 minutes or until it is tender. Boil 2 chicken eggs in 1 liter or 1 quart of water to make 2 hardboild eggs. This would at least take 15 minutes. Crack, drain, peel and rinse the egg and set asside for now. Also you can add 1 can of quail eggs rinsed and crumbled
Drain and put back in to the pot and open 1 can of mackerel. If they are in a tomato sauce do not drain, if in a brine drain. If you are using the mackerel in tomato sauce then 1 tomato is not nessecery but if you are using the mackerel in brine then add 1 chopped tomato. Add 1 onion or shallot chopped. In a mortar and pestle add 1 pinch each of celery seeds, mustard seeds and black peppercorns. Grind these in to a corse powder an empty contents in to the fishy macaroni mixture.
I have an egg slicer and you can get them anywhere and it makes chopping hardboiled eggs very easy. Put the egg in vetically and lower the slicer and boom you have perfectly sliced eggs. Now hold the now sliced eggs in place and place it horizontally and lower the slicer again and boom viola chopped eggs instantly. This is an absolute fool proof way virtually without mess even to chop eggs. Please go and buy one they are absolutely great.
You can add 1 tbs of vinegar it can be white, apple cider, balsamic or even rice vinegar, 1 drop of hot sauce. 4 tbs of mayonase. Mix very well, cover chill for 20 minutes and enjoy.
I also nearly forgot that this is a great dish to make and eat when you do not feel like cooking. Also it is very simple and a no fuss dish.
