Hey ya folks, I am going to give you another recipe that is short and easy. It is because there is not that many ingredients in here and yet it is so yummy. My youngest daughter wanted chicken again and there was some juice that I did not want to throw away so I ended up tossing other things together in this tasty dish.
You can use any meat juice that has been left over from cooking such as chicken, turkey, beef, lamb, goat or veal. Even if you have juice left over from a roast would do just nicely. Even yakhni would do just as nicely. Rinse 1 or 2 cups of quinoa and add to the meat juice, 3 dashes of adobo 1/2 cup of frozen vegetables of choice, 1 drop of hot sauce, 2 cups of water stir bring to boil and then turn down to low heat and let simmer just like you do rice.
What do I mean by frozen veg of choice that I meant peas, corn, carrots, okra, spinach or any other type of green, broccoli, cauliflower, green beans or even mixed vegetables. You can even add beans, If adding beans pressure cook 1 cup for 30 minutes before using and add with bean juice too.
If you are a vegan then it is permissible to use a veggie bullion cube instead of meat juice or stock. I hope you will enjoy.
For variation then you can eat with a can of fish such as sardines in oil. P.S. While using a multi functional cooker such as instant pot etc. Take the beans or other veg of choice and add it to the yakhni then the hot sauce and other seasonings mentioned plus the added amount of water. The beans need to be cooked on pressure cook function for anywhere between 45 minutes to an hour, 60 minutes is an hour. Let pressure escape by pressing the quick release button. Tap cancel to turn cooker off. Then add the quinoa and tap sauté function. Cover with glass lid and cook until quinoa has absorbed the liquid.
