Now let me tell you about this soup. This soup is one of my favorites and I enjoy making it. When I was a lot younger In my 20’s with two small kids that I ended up making this a lot because that was how I can feed my babies and myself.
Without furter adieu I am going to give you should I say my updated recipe on this yummy pot of soup there are three ways on how to make it too and depending on how much time you have. The pressure cooker one is a winner because it is less time with stovetop and slowcooker methods. I remember putting beans in my slowcooker at bedtime and I would wake up and my beans was done.
Take 1 cup of any white beans which are white kidney, small white beans, great northerns and navy beans. Wash these to remove the grit and sand from them if they are any. Also sort through the beans and make sure there are no stones and then put the water over the cleaned beans and let them sit until you are ready for them.
The next steps is some prepping. For slowcooker method add 1/4 cup of olive oil on high heat, 1 onion or shallot in half moon slices, 3 cloves of garlic and 4 pieces of zabiha halal turkey or beef bacon, 4 smoked sausages 2 knackwurst which is a German sausage but I get them at a zabiha halal store and they are made of beef or 2 hotlinks which is also made from beef. Stir until It turns a darker color and add this to the slowcooker. If this is a vegetarian or vegan dish then just add 3 drops of liquid smoke in its place along with the rest of the seasoning. This is a one pot meal for pressure cooker and regular stovetop. These methods you do not have to transfer. The rest is the same as it goes for all 3 methods. Now regular stovetop method is perfect if you have time on your hands because this method is about at least between 4 to 5 hours. Ok, I am jumping ahead of myself here, now on with the rest of the recipe.
In mortar and pestle add 1 pinch each of black peppercorns and mustard seeds only and grind in to a coarse powder. If you want you can use 1 pinch of dried mustard powder too as a substitute. Also for all 3 methods as well, add the contents of the mortar and peslte with 1 pinch each of lovage, tarragon, parsley, or any other herb of choices of other seasoning like 1 bullion cube, 1 pinch of pink salt, vegtea seasoning or 3 dashes of seasoned salt. Stirr and add 3 dashes of maggi or knorr aroma.
Add 1/4 cup of sliced carrots, the beans that has been washed, 1/2 gallon or 2 liters of water for all 3 methods. Do not forget this is the same recipe for all 3 methods. There are just three different ways on how to make this yummy soup. Now pressure cook method is wait until the pressure is built up and it is on high heat for the starters. After that you can cook this for 30 minutes pressure cook method then turn heat off and let pressure escape.
If bean is still a little hard then repeat for another 30 minutes. then again turn heat off to let pressure escape. This time the beans are nice and soft. I already gave you the timing for the stovetop method. If you scroll up and take a look you will see.^ For slowcooker method it is on high for 5 to 6 hours hours. This is all depending on how your stove and your electric supply is.
There are ways that you can eat this yummy soup too. Enjoy it over boiled white rice, boiled pasta, thick crusty bread that is round with a hole cut out in the top and hollowed out is great for any soup especially this one, cornbread and crackers crumbled up.
