Actually this is the first time ever I did a post about my birthday. Actually everyone wants a perticular dish on the date they are born to celebrate. I know some others get drunk too. I have seen that all before too. For me eating good is part of celebrating such an occation and not get so drunk where you can’t stand up. However the British calls it getting pissed.
Today is the 24th of August which happens to be my dadi ma’s birthday dadi is paternal grandmother in Urdu. My birthday is a day before hers which is the 23rd of August. I made 56 years old this year.
This dish I made here was with hasselback potatoes and hotdogs all on a grill The potatoes was made after I made these vegetables and it is published aldready and I just wanted it so it can fill me up. This is a statisfying as well as a tasty dish too as well.
First in a bowl add 4 tbs of peanut oil, 1 tsp each of rice vinegar, sesame oil, chili oil, 1/4 tsp of either soy sauce or panzu sauce, 1 pinch each of red chili powder, turmeric, pink salt, add either 1 pinch of either coconut sugar or turbinano sugar or 1 tsp of agave nectar. Grind 1 clove of garlic, 1 small piece of ginger washed peeled and cut in small pieces in mortar and pestle, dump in to the oily mixture. Add 1/4 tsp of hoisin sauce either 1 dab of either shrimp or crab paste, 1/4 tsp of either fish sauce or oyster sauce. Mix very well and set aside then now it is time to prep the veggies.
There is a wide array of vegetables here that can be used such as 1 handful of baby carrots or 1 bag depending on how many people are eating and this recipe can be doubled. Cut 4 yellow Italian squash and or zucchinis 4 Chinese eggplants, 1 bundle of fresh asparagus cut at the bottom and discard the woody bits, 2 bell peppers of any color, 1 onion or shallot, 1 package of fresh mushrooms of any type. After washing the baby carrots in the bag just leave them whole.
The bigger vegetables can be cut in to chunks. Cut in to half first then cut these halves in to 3 strips and these strips cut these in 3 places to make chunks, the shallot and onion you can cut in to quarters after peeling them. A simple way of cutting an onion or shallot is removing the top and bottom and cut in half to remove the skin then cut the halves in to quarters.
Place them in the oily mixture and mix very well so the vegetables can catch all of the seasonings. Let this sit at least for 30 minutes to overnight. Spray grill and grill for 10 minute intervals until they are done. If you are using a charcol grill be sure to use a cast iron skillet but then you won’t get the grill marks. For electrics have on for gas I am not sure because I do not have a gas grill. Please give me some feedback for those who use one.
Actually I have a charcol and an electric. Electric grills are easiesr besides I don’t have to inhail the fumes from the charcol fluid when lighting the charcol grill and electrics are also a lot easier to clean too. I hope you will enjoy this recipe a lot.
Also for my birthday I got lots of perfume and flowers from Mr. Riaz as usual. One of my sister in laws gave me a lovely set of dishes, shukira bhabi and 3 of my nieces gave me a huge bar of hershey’s dark chocolate which I have shared with my youngest daughter and Mr. Riaz.
