I have had quiche before and even made a few with the crust then I seen on the net is there is the crustless version. My love for quiche knows no bounds and the other day was the very first time I have made a fritatta. You can pretty much put what you want in these and the recipe pretty much writes themselves. There are many types like there are of making pizza and upma.
Upma if you remember is from India and it is a very yummy dish and therefore there are too many different ways to make a fritatta or a quiche and it depends on what you have a taste for. This is why I am also streamlining this in to one single post.
The vegetables you can use are 1 cup fresh or frozen. For my Desi and non Desi readers mind you you can turn a leftover vegetables or keema (mince) dish in to a new one instantly with this post. If you are using fresh raw vegetables so let’s say there are no leftovers and you want to just make something quick and easy. You can use 2 pieces of yucca, 1 small yam, 3 small potatoes of any kind, 1 small sweet potato even or 4 cocoyams. If you want to use 1 of any color bell pepper or red or green tomato then this is ok too.
The yam, yucca and cocoyam gets boiled. The cassava or yucca has a string in the middle so remove that after boiling and then cut it in to cubes, the yam just gets peeled and prepped like the yucca. The sweet potato and ice potato which is slang for a regular potato in African American households gets diced and put in a microwave safe container to cook for 5 minutes in a microwave. I didn’t peel the regular potato but the sweet potato I would. Wheather or not you peel your potatoes it is up to you. The cocoyam gets boiled with skins on then they can be safely removed without the fear of itching like a humdinger.
For me having my hands itch from this is no picnic and I refused to cut raw cocoyam to this day. Cut 1 parsnip or 2 large carrots can be peeled and julliened and place in microwave for 4 minutes. Here you do not need water then they are soft enough to put with the eggs later. If using frozen vegetables of choice it is ok to skip this step. One cup is sufficient. I even used fresh anise or fennel in a quiche once and it was splendid.
The protiens of choice are any kind of zabiha halal sausage matieral like the zabhiha halal lunch meat, hotdogs, 6 strips of beef or turkey bacon, Morningstar Farm’s stribbles which is veggie bacon, Pepperoni, polish sausage, hotlinks, canned fish of any type, 1 kg or 1 lb of mince of chicken, beef, turkey, veal, lamb or goat.
The seasonings can be whatver you put in it and it is what you have on hand in the house. You can go to the Indian and Pakistani stores and buy these things to make whatever spice blend you want out of here they are seeds of Mustard, fennel, fenugreek, coriander, cumin, dill, celery, black peppercorns, red chili powder, paprika, turmeric, curry powder, curry leaves, feugreek leaves frozen or dry, hing which can be made to what kind of masala that you want to use. Rule of thumb is about 1 pinch. Also 3 dashes of liquid smoke is optional for those that want it.
Dill seeds and celery seeds are not Indian and Pakistani but they work very well for this type of fritattas and quiches.
In the African stores I buy the uda, cameroon pepper, uzziza seeds and leaves, utazi, African yellow pepper, crayfish, ugu, ugba, nutmeg that I would grate.
The oils that could be used are 1 oz of coconut, peanut, palm, corn, canola, grapeseed, olive sunflower or safflower. This usually is first to be added to a cast iron skillet before anything. The oven gets preheated to 400F or 200C. For wanting to know how to make the crust follow the crust recipe to the letter this link is to my sweet potato pie recipe but if you are going to make a quiche with a bottom crust only then this is relevent, Disregard if you are going to go do a crustless quische. For this you add your cheese of choice on there and that is it.
Other optionals from regular stores here you can buy bullion cube which is 1 bullion cube or 3 dashes of adobo, lemon pepper, seasoned salt, maggi or knorr aroma, worchestershire sauce, balsamic vinegar, 1 pinch of vegtea seasoning or pink salt and herbs, 1 drop each of liquid smoke, hot pepper sauce or 1 chili of any kind deseeded, 1 onion, shallot, or 4 green onions, 2 cloves of garlic. If you want just one single herb then it is 1 pinch but If you use mixed Italian herbs then It would be thyme, marjoram, parsley, basil, oregano and rosemary. Using a pinch of these each will make up Italian mixed herb seasoning.
If this post sounds confusing then I am going to say sorry about that and I am going to explain what I put in mine next because this is just all of the posiblities with the different optionals. Everyone has their own perticular taste of what they want so far.
The way I made mine was I microwaved 3 potatoes that I had diced. I chopped 1 onion, 2 cloves of garlic and added the sunflower oil to the cast iron skillet on high and cooked these until the onion either turned translucent or brown. Again this depends on my taste. I added 1 pinch each of black peppercorns and cumin seeds in mortar and pestle to grind and added this to the onion mixture then added potato that has been cooking in microwave.
I stirred and added 1 pinch each of vegtea seasoing, paprika, turmeric, curry powder, the maggi or knorr aroma, 1 red Thai chili was my chili of choice and there are many. In a small mixing bowl crack and beat 4 eggs very well and then pour it all over whatever that your choice is for a frittata and if you want a crustless quiche be sure to add a handful grated cheese of your choice and pour this over your meat or veggie choices in the cast iron skillet.
If you are using a crust for a crusted quiche then place the flattened dough in to a pie pan and then bake in oven for 10 minutes then add the filling to the crust and the egg and cheese mixture and bake for 15 minutes. For a baked frittata is also 15 minutes. but make sure first the egg mixture is coating everything before placing it in the oven to cook.
However you can do this on stovetop too on low heat after adding the egg or egg cheese mix. You deside what you want either a fritatta or a crustless quiche. Place lid on top of skillet and this way it can cook on the top evenly too. I also want to add even left over suya is a great option too so please bare that in mind. P.S. You can also use 1 packet of ramen type noodles and use the seasoning packet that came with it only then add the beaten egg and your choice of filling on top and or cheese. Also for instant pot and the like, this happens to be the pot in pot type of thing. Add 2 cups of water to the inner lining then place a round baking dish made for the instant pot on a trivet.
Add the ingredients from this list that is used for regular stovetop and oven methods above except for the eggs and or cheese.
If using pie crust for quiche, stab the bottom of the pie crust all over and bake in the appoved baking dish for instant pot and the like multi cookers. Place them in to the inner lining by making sure this is on the trivet as you lower it in the inner lining.
Place the air fry lid on top and select bake for 375 for 15 minutes. Remove inner lid and fill with your desired egg and cheese mixture. It can be either meat or vegetables or perhaps a combination of the two.
For crustless quiche or frittata, just be sure to add 1/4 cup of water to the baking dish made for your pot in pot recipes and add the potatoes and other types of meat and or veggies or swap out for ramen noodles and follow the list of ingredients to use.
Lower the baking dish that is on the trivet and either select on high preferably steam on high for 15 minutes. Add oil and whip 4 eegs up in a bowl and add to either vegetables and or noodles. If you want add cheese making instant pot crustless quiche. Place air fry lid and select bake on 375F for 15 minutes.
