This is another delicious oh oh post. What happened I thought I had taken out chicken gizzards that I was going to make before and when I looked at it then I seen it had bones in it then I realized it was either lamb or goat.
So you will need 1 lb or 1 kg of meat to start with. Wash 1 lb or 1 kg of either lamb, goat, veal, chicken, beef, or turkey. In a mortar and pestle just grind 1 pinch of black peppercorns only. This can either be done on stovetop or instant pot duo crisp is my model. Other makes and models. please check your manufacture guidlines. I pressed the saute button and then start after I added 1/4 cup of either olive, peanut, sunflower, safflower, corn, canola, grapeseed, or 1 tbs of dalda ghee.
This can also either be slow cooked or even pressure cooked too as well. Add either 1 onion or 1 shallot or 4 green onions chopped, 1 tomato chopped, either 1 chili of any type or 1 drop of hot pepper sauce, 2 cloves of garlic 4 stalks of celerly, stir and add the ground peppercorns, 3 dashes of maggi or knorr aroma, either 3 pinches of seasoned salt adobo, pink salt, vegtea seasoning, Goya sasonador which is kind of new but it made this dish taste really good or 1 bullion cube.
Add 1 cap of either cane, rice, white, apple cider, balsamic or malt vinegar, 1 bay leaf, 1 pinch each of rosemary, sage, marjarom, parsley, tarragon, basil, oregano, thyme, cook until tomato turns to mush on saute setting on instant pot duro crisp, stovetop or in a stovetop pressure cooker.
If you have a crockpot slowcooker then I suggest that you fry everything before you place in the crockpot. Add 3 cups of water. For regular stovetop cook on low for 30 to 45 minutes, 20 minutes for stovetop pressure cooker, instant pot duo crisp pressure cook setting is preset already. I did on high for 12 minutes. The time for slowcooking on high is between 3 to 4 hours either with crockpot and with instant pot duo crisp.
When time is done on instant pot duo crisp it shuts off automatically so your food doesn’t overcook or burn. Press the quick realase button and it would release the pressure or you can just leave it be and the pressure will release slowly. At the end again press the saute button on the instant pot duo crisp also for stovetop regular pressure cooking and crockpot that you will need a thickening agent to make a nice gravy.
If using crockpot then you have to again transfer contents so you can thicken this yummy stew. You will need 1 tbs of either arrowroot starch potato starch or even cornstarch in a bowl mixed a little at a time with 1/4 cup of water until it becomes a slurry. Add this slurry and watch carefully. If using a stovetop pressure cooker then leave the lid off and cook until it thikens and you have a nice gravy.
Adding 2 potatoes is optional you can enjoy this with fonio, couscous, quinoa, rice, grits, bulgar or polenta.
