Actually I have tested and tried an absolute fool proof way of making yogurt and it is absolutely heavenly. I was absolutely curious on how I am going to go ahead and do this. I seen some boil the milk and bring it down to room temp to do add a tiny bit of store bought yogurt as a starter to the boiled and cooked down milk.
The one I seen is more simplified I have pinned on my pinterest is similar to the one I am doing except this author added another ingredient too which I would never add but this is her recipe and post and I this is my post and my recipe.
However I used to boil milk then cooled it down until it was room temperture and I tested it with my pinky after the milk cooled to room temp. If it felt luke warm to me then I would mix 4 tbs of store bought plain desi yogurt to the small pot with the milk in it.
From there I would take it and put it in a very sunny part of my house like near my kitchen window in a bowl that was covered with a lid on it and let it sit for 24 hours.
The sous vide yogurt took half as long and I didn’t have to boil the milk. You can if you want a more creamy yogurt but seriously it isn’t even nesscesary. You can do this with just 1/2 gallon or 2 liters of of either plain cow’s or goat’s milk and it can be cold too. To this add 4 tbs of plain desi yogurt or any yogurt starter in either tablet or powdered form and blitz in a blender or see below for mixer instructions and mix it until you don’t see any lumps. This can be done in a large mixing bowl and if you want you can use either a whisk or an electric hand mixer on low speed for 2 minutes.
You do not want the milk splashing you which is the reason why I said low speed on electric hand mixer. You can do this in a blender too but this means you have to wash more dishes. Turn on the instant pot duo crisp and the like to 115F. Put 1 gallon or 4 quarts of water in to the liner and fill the quart size mason jars which you will need 2 of them and make sure the rings and lids are clean as well as the jars themselves.
Fill this up with the yogurt and milk mixture and close the jars tight and place them in the instant pot duo crisp while on sous vide and select the time to between 5 to 7 hours. Place a tempered glass lid over this you want to see what is inside of this which is ok. Besides my instant pot duo crisp is an 8 quart one and 2 or even 3 mason jars can fit in there comfortably with ease.
For busy people including busy stay at home moms you folks can start this at bed time and go to sleep. I did it this way and I woke up to some nice freshly made yogurt. I put this in the fridge after opening one and tasting it and it was so nice and fresh. It made me think I was eating yogurt that was made in Peshawar, Pakistan seriously.
You can make lassi, add this to other recipes like raitas and chutneys, pakora curry and there are a couple of dishes I am going to make in the future Inshallah while using this but it is a secret for now only that I am going to reveal when I post it. Also this can be used in kormas too. With that said I hope you will seriously enjoy this yummy yogurt and enjoy its simplicity.
You can also eat this with honey, fruit and an occational nuts or sunflower seeds.You can also sprinkle either flax seeds or even chia seeds for something that is a very healthy snack or use this to make smoothies too.
