Hey there there is a lot easier way to make these yummy dishes and they are both very similar except one uses milk while the other one will use cream or half and half which is what a lot of people use as a creamer for their coffee. My paternal grandfather did it and the only way I seen him drink black coffee if there wasn’t any cream in the house. Besides the old man didn’t put sugar in his coffee. At times I had to make him his coffee and he got pretty grumpy without it. Half and half isn’t just for coffee and besides it can be used if cream is not available. After all it is simply half milk and half cream. This is why it is called half and half.
- Besides 1 container of half and half or cream is stictly for the potatoes au gratin while scalloped potatoes require 3 cups of milk or 1/4 cup of nido milk powder in 4 cups of water. the vegetarians and vegans can use plant milk and plant milk in place of regular cow’s milk.
- Both require needs to have 3 tbs of either potato starch, cornstarch or all purpose unbleached flower mixed in just add the dry ingredients first and then add the liquid a little at a time to keep it from forming lumps and set this aside.
- Add the 1/4 cup of oil of choice. I added vegetable oil this time to the inner liner. Peanut, avocado, grapeseed, canola, sunflower, safflower or corn. Add 4 pats of butter or vegan butter that is veg friendly for both on saute function on high.
- Slice up to 10 to 15 potatoes depending on how big as they are. I prefer big potatoes for this dish though. And I slice them unpeeled after I scrub them very well but it is up to you. If you like your potatoes peeled then it is totally up to you. When done set them aside.
- Now you can add either 1 onion or shallot cut in to half moon slices or 1 leek or 4 green onions chopped if you wish. If using a leek make sure you wash them very well because they can be quite muddy. Add 4 cloves of garlic chopped.
- The herbs of choice are 1 pinch each of tarragon, rosemary ,thyme which I didn’t add but I added dill, marjoram, parsley, savory, chives, lovage, white pepper, 1 pinch of black peppercorns, celery seed ground in mortar and pestle, cracked green peppercorns, a small amount freshly grated nutmeg.
For the protien options for the carnivoure, vegetarian and the vegan are,
- Either 1 kg or 1 lb of ground lamb, chicken, turkey, beef, veal or goat, 1 can of zabiha halal lunchmeat or 1 package of hotdogs or other sausages of beef, chicken, or turkey, or 6 pieces of zabiha halal beef or turkey bacon chopped, 1 can of zabiha halal corned beef, 1 can of tuna, salmon, sardines, mackeral, crabmeat, baby shrimp, oysters, mussels or clams in either oil or brine undrained, for veg friendly scalloped potatoes and potatoes au gratin a like either add 1 bag of Morningstar farm crumbles or stribbles the same amount as the beef or turkey bacon.
- Add 1 drop of hotsauce. 3 dashes each of liquid smoke, maggi or knorr aroma, and balsamic vinegar. You can use tarragon infused or even malt vinegar if you wish. 1 bullion cube, 3 cups of water and stir,
- Press cancel and now add the potatoes, milk mixture, grate cheese of choice such ass cheddar colby Monterey jack pepper jack habenero jack there is habenero cheddar too and it is made by Cabbot. Omg I miss my Cabbot cheese it is the best cheese on earth, Dutch Farms American cheese, Swiss Guyre, munster, brick, Edam even smoked cheese is amazing too. Just take the block and cut it in to 3 segments or use 9 slices of the American and also there is vegan cheese that will come in to play also and it comes in different varieties. The potatoes goes at the bottem followed by half of the milk mixture then cheese then add the 4 cups of water, repeat by adding the rest of the potatoes, milk or plant milk mixture and then add the cheese or vegan cheese on top and stir a litlle cover and let slow cook in the instant pot on high for at the most for 4 hours or 6 hours on low with a tempered glass lid.
- Be sure to start early so you have time for yourself and your family, When done the potatoes should be soft and the sauce thickened in both occations.
- This is where it ends here and then you decide on what you want. Do you want potatoes au gratin or scalloped potatoes???? The choice is yours.
Take 2 pieces of whole wheat bread, tear it to pices and put in a mini processor to grind very fine, or you can use either panko or even mazzo meal. It has to be at least 1/4 of a cup of bread crumbs for au gratin only, Add the final layer of cheese and 1 pinch of paprika on top in both occations and take the air fryer lid and place it on top of the instant pot. I have the duo crisp model. For those that don’t there are instant pot air fryer lids available for your model. Select bake for between 10 to 15 minutes on 400F or 200C. The instant pot can be used in either farenheight or centagrade by pressing + temp according to the owners, manual.
Actually I used the zabhiha halal lunch meat in mine or you can have it plain too if you wish. I totally love the awesomeness of this dish because it is smooth velvety cheesy and creamy.
