As long as you known me by reading my post that I very much love playing around with the flavors. Although I never have gone to culinary school that I am pretty much self taught and I watched a lot of cooking programs starting with dear old Julia Child. Actually I want to go on a rant about this stupid driver Amazon because they never follow delivery instructions and they damage other people’s orders. Fedex and UPS are also bad at this too and so is USPS.
We are still in a pandemic and these careless idiots at Amazon damaged a glass bottle of grey Celtic sea salt and I got a nick on my finger because the bottom of the bottle is broken. This really pissed me off and I even emailed the CEO of Amazon again Jeff Bezos. Besides I hope him and his office is reading this very post I am writing. I really wanted to try out this sea salt in particular to see wht the big deal is about.
First you will need 1 large sheet of each of aluminum foil and parchment paper. The parchment paper sits on top of the aluminum foil for now. In a large mixing bowl add 1kg or 1lb of chicken with skin and on bone you have washed and place in to this bowl. Add 1 tsp each of plain yogurt and water with 1 pinch of cornstarch in it to make a slurry and apply this to the chicken, 2 tsps of olive oil, 4 tbs of lemon juice, either 1 pinch of any type of sea salt, kosher salt, seaoned salt, vegtea seasoning, seasoned salt, adobo, pink salt, bullion powder or 1 bullion cube.
Add 3 dashes of maggi or knorr aroma, 4 cloves of garlic crushed 1 pinch each of lovage, savory, thyme, basil, oregano, rosemary, 1 tiny piece of lemon peel ground in mortar and pestle, either 1 pinch of black, pink, white, green or mixed peppercorns in mortar and pestle. This seasons the chicken pieces nicely and place them on the parchment papper lining the aluminum foil and proceed to rap it like a parcel.
Place in the fryer basket or even the pot in pot method on a trivet in the instant pot duo crisp and place 2 cups of water in the inner lining. If you broil it is 400F or 200C for 15 minutes until it is done, bake it is 350F or 180C for 30 minutes then turn and repeat until done, air fry 375F or 190C for 30 minutes and repeat until done, roast on 380F or 200C for 20 minutes and repeat until done using the instant pot duo crisp and the like. For regular oven and I mean it is advisable on a cold day to do this is 350F or 180C to bake also you can grill this on regular aluminum foil. Only for grilling just be sure to have the electic grill set on 5 and the aluminum foil has to be sprayed with cooking spray and wrapped before tossing it on the grill and let this cook at 15 minute intervels until it is done.
