Actually I have another story to tell and it is about my health I have always tried to eat healty by eating lots of vegatables fish and whole grains. Little did I know I without knowing that and how I became a diabetic. Diabetes also runs in my family too. My paternal great grandmother who was the mom of my paternal grandmother, my paternal uncle who was an absolute pos, my dad and a cousin on my dad’s side of my family that I met after I took my DNA test through 23andme. My cousin on my mom’s side and a couple of my maternal uncles also have it.
I am glad they was open and honest with me about who had what in my family, because if not I would have been very angry. I was using the bathroom like crazy and I felt quite incontinent at times so I very much stayed at home. I also was losing my balance and the contents of my saliva turned to normal watery type to like a mucous type almost slimy like texture. I can also blame one of my inhalers that controls my asthma has steroids in it also. I too have an extreme weakness for pasta and rice. There are other times I have changed my diet for health reasons and this is not the only one. I cut white sugar out of my diet 15 years ago and I learned I was consuming too many carbs especially potatoes. I eat potatoes with the skin on as we all know and the stress, I have been under extreme stress as well. I told my doctor check me for a UTI and diabetes and she ran the labs on me and both came back positive.
My doctor gave me cipro, metformin and diabetic testing suplies on my very next visit. My metformin dosage was 1000 mg twice daily. My stomach hurt me like hell. It was burning and I already have a stomach ulcer since I was 20. I even vomited. I called my doctor to complain and told her the medication is making me sick. She told me cut the dosage down to 500 mg. Mr. Riaz cuts my pills and now I feel a lot better. A friend told me that metformin will make anyone want to barf which happened to me once before my dosage got changed. I also added a new catagory called diabetic friendly and these recipes I am coming up with are low carb and high protien.
I remember a long time ago when I was in my late 20s that I started pumping iron. I did this for a couple of years and I gave up after I cracked my tailbone by falling down the El steps here in Chicago because I missed my stop. The weather was rainy and I slipped because the steps where slippery from the rain. A marvolous man who had his own gym called Mario’s Gym. The owner was Mario Nieves and he put me on a carb depletion diet and what I am doing to manage my diabetes is exactly just that.
One other cousin I met after my DNA test is on my mom’s side told me he eats garlic and olive oil with his broccoli and this concept I have tried on cauliflower. Besides this will work for any type of vegetable almost. With the instant pot on steam function just be sure you add 6 cups of water to the inner lining first. Insert a steamer basket. Mine is silicone. Use whichever kind you have that is compatable with instant pot or other types of multi functional cookers. Cut up either 3 zucchinis, 3 Itialian yellow squashes, 1/2 head of any type of cabbage, 3 heads of broccoli depending on the size, 1 head of cauliflower, either 1 bunch of fresh or 1/2 bag of frozen spinach, chard, kale, turnip greens, collard greens,mustard greens, 4 large carrots or 1 handful of the baby ones, 1/2 bag of frozen peas, okra, 1 lb of cut green beans or 1/2 bag of them frozen as well. Steam for 20 minutes on steam setting on instant pot and the like. At this stage it is fork tender. Remove the vegetables in the steamer basket from the cooker and empty the water in there.
Rinse the inner lining and add 4 cups of water and place a silpat inside the air fry basket. Place this inside the inner lining that is already in side the cooker. Cut the sausage up and place it in the air fry basket lined with silpat. Attach the air fry lid on 375F or 191C for 15 minutes. Remove the air fry basket that has the sausages inside. These are zabiha halal sausages. Empty water and rinse again. This time put 3 tbs of either coconut, corn, avocado, flax seed, macadamia nut, almond, olive, canola, sunfflower, safflower, grapeseed or vegetable oil. Add 1 pinch of salt of any type, vegtea seasoning, bullion powder or 1 bullion cube. Add 1 pinch of any herb of choice, 4 cloves of garlic, either 1 shallot or onion, 1/2 bag of frozen pearl onions or 4 green onions plus the veggies you just steamed and 1 tsp of balsamic vinegar on sauté function on high. Add sausage and heat through for 5 minutes and serve. For non diabetics you can eat with whole grain bread of your choosing.
For me the diabetic noob, I ate just as is because I am trying to get my sugar down to normal. Have a pleasent meal and keep me in your duwas please. Oh if you want you can use 1 lb or 1 kg of either lamb, beef, veal, goat or chicken in place of the sausages. Just season it acordinglingly with the seasonings above before you cook it.
