Hello I have been googling more about what kind of noodles is safe or not safe per say for diabetics to eat. However I have a couple of cousins and an maternal uncle too that have celiac disease. It is an inability to digest gluten. So glass noodles are also gluten free and less carbs then the wheat noodles. -Take 1 or 2 bunches of glass noodles and place in a microwave safe bowl with 4 cups of water and place in a microwave to cook for 2 minutes then drain. Here you can either eat it with either a stir fry of choice in place of rice or other noodles or do as I did. Also you can add raw mushrooms of any type but if you are using the dried ones, place it in the same bowl as the glass noodles and cook it in there too. Also if you wish you can add 1 sheet of noori which is the dried seaweed sheets that is used for making sushi.
The rest is prepaired as a salad by chopping between 2 to 4 green onions, 1 random can of fish either drained or undrained and my choice this time was tuna undrained because I wanted more flavor. Add 1 tsp of Chinese black, lychee, cane or even rice vinegar. Add 1 pinch of msg, 1 tsp of either coconut, macadamia nut, flaxseed, almond, or sesame oil, either with or without 1/4 tsp of chili oil. Add 1 tsp either of soy sauce, tamari or panzu either with or without dark soy sauce, 1 dab of either crab paste or shrimp paste or 2 drops of either fish sauce or oyster sauce.
In a beaker that com 3es with immersion blenders add 3 tbs of either whole egg powder or powdered egg whites with 1/2 cup of water. Attatch the blender attachment and plug it in then blitz this by pulsing until it is smooth and lump free. Spray wok or skillet with cooking spray and cook these until they are cooked through and added to the noodles. Also you can use a fresh egg either from quail or chicken 1 from chicken and 4 from quail. This could be cooked to how you like it either boiled, poached or fried. Canned quail eggs are ready made so you can drain or rinse. Add 4 to your noodles and put the rest in a bowl with a lid to use for later. Add 1 drop of siracha and a pinch of herb of choice for garnish which the last part is optional.
Not everyone likes sirracha because of it being spicy and everyone has their own herb of choice. Sipping kawa which is our green tea Pathan people prefer, matcha green tea which is the Japanese type and oolong tea is highly recomended.
