The story behind this recipe is a very interesting one because it involves my mom, her friend, and myself. My mom told her friend and me about the recipie given off of a can of mackerel and she said to us, meaning her friend and me that it seemed kind of gross and her friend agreed with her. Now her friend is a picky eater and doesn’t want to admit it, LOL it is sooooo funny.
This is how this recipe has come about and I have come up with my own. If my mom was still here and she tried this maybe she wouldn’t think it is yucky anymore. However I made this super yummy and it is about portion control that my dietician pointed it out to me for diabetics.
In a mixing bowl add 1/4 cup of all purpose unbleached flower, 1/2 a cup of cornmeal or 1/2 cup of besan (chickpea flour), 2 pinches of baking powder, this gets sifted together. I ended up getting a flour sifter because it makes the flower light and gets rid of the clumps that is unseen in the flour. Add 1 egg or 4 tbs of powdered whole eggs, 1 can of canned fish such as tuna, mackerel, sardines, salmon or even crab meat undrained.
This fishy water is where the flavor is. This is why I ask you not to drain it from the can. Mash the fish and make sure it is mixed well with the cornmeal or besan mixture. Add 3 tbs of cheese powder which is purely optional, 1 clove of garlic, 1 onion or shallot or you can add 4 chopped green onions chopped very small. Add 1 pinch of sea salt but if it is smoke infused then don’t add liquid smoke, with chili infused then don’t add any chili powder or hot sauce, adobo, seasoned salt, bullion, kosher, pink, maggi or knorr aroma, 1 pinch of peppercorns of any color in mortar in pestle until it is ground in to a coarse powder, 1 pinch of baking powder, 1/2 cup of water in case if the amount of liquid from the fish itself isn’t enough and make this in to a lump free batter.
Be sure to add the water a little at a time to avoid a clumping situation and stir as you go. Add 2 tbs of either olive, coconut, vegetable, flax seed, macadamia nut, coconut, safflower, sunflower, avocado, peanut, grapeseed, canola or corn oil. Stir this in to a batter and spray this in a baking dish sprayed with cooking spray.
For instant pot and other multi functional cookers: add 3 cups of water to the inner lining and place a trivet inside. Place this fishy mixture in a sprayed cooking dish made for these types of cookers. Place the air fryer lid on top and select bake at 375 and select the time 20 to 25 minutes and select start. When the cooker shuts off, remove the air fry lid and take a fork or tooth pick to see if it came out clean. If not repeat for another 15 to 20 minutes until the fish loaf itself is completly done.
This dish is simply amazing and you may want to place a slice of cheese on the top to melt and the choice is yours completely.
