I remember I was looking at cooking shows on PBS. Here in Chicago we have two of them one on which is owned by the City Collages of Chicago called WYCC and WTTW which are up and running for a very long time and this one is private and of course there is a subscription drive to keep the station running. On one of these cooking programs there is a guy who cooks game meat and was using juniper berries in the recipe. I said ah ha I got to try this so I finally had came up with a recipe where I had used it.
I had bought a can of juniper berries from Amazon. I put it in this dish and it turned out divine. Start by putting the instant pot on to sautè funcion and add 1 oz of either avocado, olive, grapeseed, canola, corn, sunflower, safflower or even vegetable oil. Add 1 onion or shallot in half moon slices, 4 cloves of chopped garlic. Stir until brown then add 1 lb or kg of either lamb, beef, veal, goat and the exception to the rule is 1 rabbit cut up and washed very well in a solution of 1 tbs of white vinegar in 1/2 gallon or 2 liters of water and wash it very well then rinse in cold water.
In mortar and pestle add 4 juniper berries and 1 pinch of peppercorns in any color, pink, black, white or even mixed. Grind this in to a coarse powder and add to the meat. Add 1 pinch of either kosher, plain sea salt and not the infused type, seasoned salt, vegtea seasoning or bullion, 3 dashes each of balsamic vinegar, either maggi or knorr aroma, 1 pinch each of lovage, chervil, savory.
Add the vegetables that goes well to make up this lovely dish such as a bulb of anise/ fennel including the fronds which is the green stuff on top. This will give the dish so much delicious flavor. Also you can add 3 or 4 parsnips, 2 beets, turnips, 1 rutabega or a bag of baby carrots. The parsnips, turnips and rutabega must be peeled and cut then washed. The baby carrots just need to be washed.
Add either 2 pinches of meat tenderizer or 1 small piece of green papaya ground for this dish to make the meat tender. Press cancel and then switch to slow cook on either high or low for up to 4 hours. This depends on what type of meat you are cooking. Add 2 cups of water and place a tempered glass over the top of the instant pot while cooking.
