I have another simple regional dish from Peshawar for you. This is served at weddings in Peshawar along with mewa channa pulao (chickpea and raisons rice dish) , yummy to my tummy.
Ingredients: 1 cup of water
1 handful of pistachio nuts
1 cup of sugar in the raw this can be found in any grocery store and is a healthy alternative to white sugar or you can add either or 1/2 cup of agave nectar or sugar fee syrup.
6 aloo bhukharas
1 tiny drop of kerwa essence
1 tiny drop of rose essence
3 pieces of orange rind
3 green elachis this is cardamoms
method: In rapidly boiling water first add the aloo bkuhara, orange rind pieces, green cardamom and pistacios , add the kewra and rose essence stir then add the sugar in the raw. Let it boil till it becomes syrupy. If a little thin add another cup to a half a cup of sugar in the raw. Cook for 10 minutes or until it becomes thick constantly stirring. It is done when it is thick. Let it cool and then enjoy it with mewa chana pulao.
