These yummy things are highly addictive. They are the west African version of a doughnut. I remember the first time I have had puff puff is when a friend I know in real who’s aunt was over here visiting her from Cameroon, made these yummy things.
Oh my God!!!!!!!! They are so good I mean she put her foot in it. It is beyond being the bomb. The American street slang for saying she or he put his foot in it means that they really excelled at making this. It is more then saying it is the bomb which means it is great. Also if someone tells you oh my God you put your foot in it, they are paying you a compliment.
Besides USA English has a lot of slang words. Now auntie as I call her, told me it is a yeast dough. The dough is nearly like a thick batter consistency.
You will need 6 to 8 handfuls of multi purpose unbleached flour, 2 pinches of turbinado sugar, 2 pinches of powdered rapid rise yeast, 1 pinch of baking powder, 1 pinch of red chili powder and 2 big pinches of cumin. I have a mini grater that grates things finely. This does the job nicely for grating nutmeg. I grated a little bit of nutmeg.
Make sure you have a clean skillet cast iron or otherwise. I use cast iron at all times for this and even when I am making puff puff I shallow fry I never am big on deep frying at all so I added 1/4 cup of peanut oil to my cast iron. vegetable oil can also be used.
I added 1 cup of water to make a very loose dough which is kind of a thick batter consistency . I covered the bowl with its own lid for 15 minutes.
When I came back I seen the dough has risen, turned on the stove to medium high and allowed the oil to get hot and started dropping them in at 1 tsp at a time.
At this stage when they are cooking they start puffing up. This is why they are called puff puff. My husband really loves puff puffs too and has them with his tea. They pair very well also with my mazano chili sauce and goes with shito well too.
