I remember when I was first going to the so you think you can cook group in facebook. One lady posted a recipe of moi moi made in a microwave and she used bean flour. It looked so yummy I had to try it and I did and I posted it and I said thanks for giving me the idea. 😀 I came up with the buckwheat pancakes for pancake day she made them too and hers are very fancy.
Plus she is also a foodie and a food blogger. My microwave ekuru is roughly based on Sisi Jemimah’s recipe from her blog.
Instead of using leaves or aluminum dishes or bags to steam mine I chose microwave. I used a mixing bowl and added 1/2 cup of bean flour, 1 pinch of pink salt, 1 pinch of crayfish, 3 smoked dried shrimps crumbled and 1 cup of water to make a batter. I used my big rubber spatula and kept scraping the sides of the bowl. I added a little bit of water at a time until I had a well mixed batter that is free of lumps.
Also before I started I soaked one piece of smoked fish. It is a smoked herring fillet that is called aranka by Puerto Ricans. I am so infatuated with this fish. I soaked it for 3 hours to remove the excess salt and to clean the fish. I was making another dish at that time too. I was trying out Nigerian lazy chef’s second recipe for ayamase and so therefore I had cooked a part of a goat’s head I had left over in a pressure cooker to use for later and fried some liver and kidneys I had cleaned and soaked. These were set to the side for later use.
I got out my electric mixer and on low speed worked with the batter for 3 minutes. This gives the batter a lift. I put my ekuru in a glass microwave safe container with a lid and cooked it for 2 minutes then let it set for 3 minutes and let it cook for another 2 minutes.
My ekuru was firm at this point and fork came out clean. then I went and made the ata din or pepper sauce.
For the ata din sauce, I got out my blender the big one this time it is also an oster and use even though it is older then my immersion blender, this too grinds up tomato seeds with no problems. I added less then 1/4 cup of water to my big blender because this makes the job a lot easier. I had 1 half of a tomato that my husband had used for sandwiches the other night. I added 1 habanero, scotch bonnets are another option and can use either or.
I added 1 fresh red bell pepper because I didn’t have any dried ones, I added 2 cloves of garlic and turned the blender on and pureed everything. I added 3 tbs of red palm oil and let it get very hot and added 2 slices of raw onion and let it caramelize followed by the tomato pepper puree. I added one bullion cube, 1 pinch of crayfish, 1 pinch of dawadawa powder, 3 smoked dried shrimps crumbled, the dried fish I had to the side that I soaked earlier and 2 of the liver and kidneys I fried and set to the side for another dish I was cooking.
I let the sauce cook until it was almost dry and I put it on top of my ekuru.

This is my how my sauce turns out and I don’t like a lot of oil in my food.and it was plenty saucy enough for my ekuru.
P.s. If you want you can use other proteins of choice. Just cook them ahead of time. This is an earlier blog post of mine that I am updating. It doesn’t always have to be fried kidneys. Add 1 can of corned beef, chicken, turkey, smoked turkey, tripe, beef, lamb, goat, veal, fish and other seafoods. This can also be eaten with just not ekuru but with boli and dodo which are a couple of ways to eat plantain, boiled potatoes or even yam.
As for the dawadawa powder I got it from an African store. Pincebrim foods is the maker and it is a red label it also says iru on the label. This is what I have used.
So this is one of the times I cook for myself and no one can blame me so this is one of my dishes for me only. The verdict, just plain delicious.
